Nonna's Polpettone at The Woodfire Bistro

Created by Kash, owner of The Woodfire Bistro, together with Chef Mac.

Nonna's Polpettone

Main Dish

Nonna's Polpettone is a classic Italian meatloaf of seasoned beef and pork, Parmigiano and fresh herbs, served over creamy garlic & Parmesan mash.

The recipe found us in Italy. While travelling there to learn the craft of Neapolitan pizza, we stayed with a local family, and one evening our host cooked this polpettone from a recipe passed down through generations. It stayed with us long after we came home, and it became the inspiration for two dishes our guests already love: our Polpette della Nonna and Spaghetti & Meatballs.

For Revel & Feast, we're bringing the original to the table. What makes it special is that it isn't a restaurant invention; it's a family dish, made the way an Italian nonna makes it, slow, generous and full of classic flavour. It's the meal that welcomed us into an Italian home, and now we'd like to welcome Revelstoke with it.

The People Behind It

Created by: Behind Nonna's Polpettone is Kash, the owner of The Woodfire Bistro and Old School Eatery here in Revelstoke and Chef Mac who designed the menu for The Woodfire Bistro. We care deeply about food made the traditional way, so much so that we travelled to Naples, Italy to learn Neapolitan pizza at its source rather than just reading about it, although we haven't been able to launch the pizza just yet.

That trip gave us more than pizza skills. Living with an Italian family showed us that the best food comes from generosity and tradition, and that's what we try to bring to every plate. Together with Chef Mac and the kitchen team, we cook for Revelstoke the way they were cooked for in Italy: like family.

The Inspiration: The dish was inspired by a meal we'll never forget. One evening our host made polpettone from a recipe handed down through generations of the family, and it was the kind of meal that tastes like home even if it isn't yours. That dish shaped the way we cook. It became the starting point for our Polpette della Nonna and our Spaghetti & Meatballs, and for Revel & Feast we wanted to share the original that started it all: simple ingredients, made with care, the way a nonna would make it.

About the Business

The Woodfire Bistro grew out of a simple idea: to bring honest, traditional Italian cooking to Revelstoke. To do it properly, we went to Italy to learn Neapolitan pizza firsthand, and we came home with something just as valuable, a family recipe and a new understanding of what hospitality means.

That experience runs through our menu. Our Polpette della Nonna and Spaghetti & Meatballs both trace back to that meal in an Italian home, and Nonna's Polpettone is the original we're sharing for Revel & Feast.

We're proud to be part of Revelstoke's food scene, alongside our sister restaurant Old School Eatery, and we're grateful to the locals and visitors who make this town such a great place to cook for.
